Tiramisu Cake

Traditional Tiramisu is a popular Italian dessert made of ladyfingers dipped in coffee and layered with a mixture whipped eggs, sugar, mascarpone cheese and cocoa powder.  But I personally like to make little changes in recipes and keep it cost friendly too.  Mascarpone cheese is great if you have it but regular cream cheese is just fine too:) So here we go.

Potato Pancakes

I love making these potato cakes for a change once in a while.  They are easy and really tasty!  You don't even have to buy a lot of ingredients if you have potatoes in the house.  I like to have already seasoned Bob Evans Hash Browns in my fridge as one of my easy and quick dinner options.  You can use any brand and seasonings of your choice.  
Take your potatoes to the next level!

Banana Pineapple Smoothie

A nice way to start your morning is treating yourself with this protein-calcium -fiber all in one smoothie.  And of course some cinnamon would be just right to give a nice touch to it.
Enjoy and have a nice morning!


1 cup Silk Vanilla Almondmilk
2 tbsp yogurt (any kind)
1 banana
1/2 cup pineapple chunks (best if frozen)
1-2 tbsp golden flex seed
1 tbs honey
1tbs lemon juice
Cinnamon for dusting 


Combine all the ingredients in a blender in which order they are listed and blend until smooth.  Adjust the sweetness to your taste and don't be afraid to mix with your favorite fruits too.  
lastly garnish with a couple banana slices and cinnamon stick or powder.
Enjoy because you deserve it!

Smoothie: Extremely Raspberry

My inspiration for raspberries comes from my husband who is very particular about his smoothies I guess.  So I wanted to make him smile with this smoothie and that's exactly what I saw on his face after he drank this pink awesomeness.  Well, I don't mean to brag, but he also said this was my best smoothie yet:)


1 cup of mango juice or lemon tea
1 cup of frozen raspberries 
1/2 of frozen pineapple


Combine all the ingredients in the same order as listed above and blend them until smooth. Garnish with blueberry and raspberry.

Smoothie: Blackberry and Watermelon Madness


1/4 mango or peach iced tea

1 1/2 cups of watermelon 
1 cup blackberries (best if frozen)
1/2 cup ice cubes (optional)


Combine all the ingredients in the order in which they are listed and blend them until smooth.  If you prefer thicker smoothie just add more ice cubes.  

Adjust the sweetness to your taste by adding honey or any sweetener you wish.

Happy Hour Duo

We tried these cocktails in Las Vegas with my niece recently and really liked them.  So I looked up some recipes and this is what I came up with.  Green Apple Martini is my new favorite.
Great summer drinks!

Green Apple Martini


1 ounce sweet and sour mix
2 ounce melon liqueur
1 ounce vodka
Maraschino cherry for garnish


Combine sweet sour mix, vodka and melon liqueur in a cocktail mixer full of ice. Shake like crazy and
strain into your favorite fancy glass.  Finally, garnish with a cherry.

Blue Hawaiian Cocktail


1 cup crushed ice
1 ounce rum
1 ounce cream of coconut
1 ounce Blue Curacao liqueur
2 ounce pineapple juice
Maraschino cherry and slice of pineapple for garnish


Pour the ingredients into a cocktail mixer (or a mixing glass) with crushed ice.  Shake well and strain into a collins glass or any glass you desire.  Garnish with a cherry and pineapple.
Enjoy your awesome drink!

Cake Pops

I just love these fun, pretty and perfect size cake pops as they make all the kids happy!  Actually I am my mom's kid so it makes me happy too:)  They are ideal for birthday parties, baby showers and school parties.  Plus they are especially fun to make with your kids!!!

I was reading an article the other day about different minerals and vitamins.  So I wanted to find out more details about some of them, like magnesium for example.  I've heard of this mineral of course, but not much of its specifics.
It's a mineral we need for our muscles, nerves, bones and our immune system.  Magnesium helps keep a steady heart rhythm, normal blood sugar levels and blood pressure.  It also plays a role in making energy and protein for the body.

Cake Day & Night

This is my sister's famously easy- lazy cake that would please everyone.  And this cake is asking for only a few simple ingredients that you almost always have available.  OK may be not the Irish cream:)

Repeat the recipe twice to make two layers (white cake and chocolate cake).  I also slice each cake  into two layers (makes four layers).  Looks even prettier that way:)

Memory Juice

One of my many childhood memories that puts a smile on my face is - my father coming home from work with paper bags of groceries.  He loved fresh food and was a big fan of juicing.

I remember him buying different fruits and veggies and juice them for us (kids) all the time.  He'd explain that we were getting all the vital nutrients faster that way than through solid foods.
In fact juicing makes it easier for your digestion.  It also allows you to fully absorb the vitamins and minerals that normally get destroyed by heat, processing and certain chemicals.

Coco Cay Island

The Coco Cay Day.

This 140 acre tropical paradise is reserved exclusively for cruise ship guests.  Lots of hammocks around the island that was kind of different.
We got to the Island and our plan was to do our first time ever parasailing!  Well, if you knew me you'd understand that even the thought of it was enough to give me an earthquake...but after having a discussion what we'd remember years later about this trip - my husband and I agreed to experience the thrill...

Just got back from the Cruise!

Last year it was our 10th Wedding Anniversary and we had our baby #3!  As you can imagine that itself was a major event.  So, whatever plans were made for that occasion had to rest...
This year our long awaited cruise with Royal Caribbean (first time) finally happened.
Very special thanks to my Mom, my husband's parents and my niece.  We are lucky and we know it.
