Cod is a mild-tasting fish, which means it's easy to work by adding different flavors. A drizzle of lemon, garlic, fish seasoning, olive oil combined with a sliver of butter makes this heart-healthy fish a great dish.
Ingredients:
3 cod fillets
1/2 teasp salt
1/2 teasp paprika
1/2 teasp of black pepper
1 clove garlic,crushed
1 teasp of Voodoo Blackening Seasoning (or any fish seasoning you have handy)
half lemon

Directions:
Preheat oven at 400 F. Prepare a non stick cookie sheet.
Combine spices and rub spice mixture over both sides of fish fillets. Place fish on your cookie pan and bake for 10 minutes or until fish flakes easily with a fork.
Squeeze lemon over cooked fish and serve with rice pilaf or couscous and vegetables at your choice.
Also you can sprinkle with some chopped parsley to garnish.
