Dinner Rolls

 


Sometimes you just need some soft delicious rolls to put on your dinner table.  This recipe is a must to include in your book and it will definitely become your family's favorites!


Ingredients:

2 cups lukewarm milk (105-110 F)
2 eggs
1 teasp dry active yeast
1 1/2 teasp salt
3 tbsp vegetable oil
4-5 cups all-purpose flour (or bread flour)

Glaze

1 egg white
1 tbsp water

Directions:

1.  In a mixing bowl pour the milk and add the yeast.  Let it sit for 5 minutes.
Add eggs and oil to the yeast mixture and whisk well.  Sift the flour and salt together and stir into the mixture.  Continue stirring with a wooden spoon until the dough begins to come together.

2.  Flour the counter lightly and knead the dough with your hands until smooth and elastic.  Shape the dough into a ball, put it back into the bowl and cover with a plastic wrap.  Let it rise in a warm place for 1 1/2 hour, until the dough has doubled in volume.

3.  Brush a baking sheet with butter and dust it with flour.  Turn out the dough onto a lightly floured counter and knead for 5 minutes.  Cut the dough into small equal pieces and shape each piece into a ball.  Place them on the baking sheet.  Slash the top of each roll (or cut a cross) with a sharp knife and cover with a damp dish towel.  Let rise for about an hour.

4.  Brush the rolls with egg white glaze and bake for 30 minutes, until golden brown.
