Cinnamon Rolls

You can never say no to these cinnamon rolls and also be prepared, because you will fight hard to stop yourself after having the first piece down!  I won't blame you!  Who would?

Ingredients:

3/4 cup milk
1/4 cup unsalted butter
3 1/4 cup all- purpose flour
1  teasp active dry yeast
1/4 cup sugar
1/2 teasp salt
1/4 cup water
1 egg

Filling:

3/4 cup light brown sugar
1 tbsp ground cinnamon
1/2 cup of powdered sugar

Directions:

1.  In a saucepan heat the milk for 5-8 minutes and mix in melted butter.  Stir and let it cool until lukewarm then add the yeast.  Let it sit for 5 minutes.

2.  In a large mixing bowl combine flour, sugar and salt and mix well.  Add water, egg and the milk mixture and beat well.  When the dough begins to come together, turn it onto a floured surface and knead for 5-8 minutes, until smooth and elastic.  Cover the dough with a plastic wrap and let it rest for about an hour.

3.  Mix cinnamon, light brown sugar and powdered sugar thoroughly, breaking up sugar lumps if there is any, and set aside.

4.  Flour the counter lightly and knead the dough with your hands for 5 minutes.  Roll out the dough using a rolling pin to 16x12 -inch and brush it lightly with water or melted butter.  Spread the cinnamon mixture only in the center, then fold top and bottom thirds of dough over the middle - like busyness letter. Then fold left to right. This will give you almost a G shape rolls once cut and baked.  Very gently stretch the dough to form a cylinder, pushing ends in to create even thickness.

5.  Using a sharp knife, slice cylinder evenly into thirds to arrange rolls.  Place the rolls in your baking pan and let them rise for about 1 hour.  Bake at 350 F for 25-30 minutes until rolls are golden brown.  Dust with powder.
