This is so pretty and healthy too. You can make this as a side dish, salad or snack for lunch or dinner. You can even make this with different dressings like balsamic, Italian or French.
1 can red kidney beans
1 can whole beets (medium)
3 pickles medium
2 tbsp of red onion (diced)
salt and pepper to taste
2 tbsp vegetable oil (optional)
1 tbsp chopped cilantro
1. Drain and rinse the beans and place them in a mixing bowl.
2. Cut the pickles into small cubes and add to the beans.
3. Drain the beets and cut them into cubes and add them to the beans and pickles. Add oil if you'd like, then salt and pepper to taste. Toss well, garnish with cilantro and serve.
